Your first instinct might be to wonder if something is off.
It isn't. The opposite is true.
The Science
High Curcumin = Deeper Colour. Always.
Curcumin is the primary bioactive compound in turmeric. It's the reason turmeric has been used medicinally for 4,000 years. And it happens to be the pigment responsible for turmeric's colour.
More curcumin = deeper, darker, more saturated colour.
Less curcumin = brighter, more uniform, "pretty" yellow.
Think of it like olive oil:
Extra virgin cold-pressed = darker, greener, more complex.
Refined = clear, pale, stripped.

Permitted Colour Addition
Food colour E100 (synthetic curcumin extract) is legally permitted in turmeric powder in India. Read the fine print on your current pack.
Chemical Brightening
Some processors use permitted washing agents on raw rhizomes.
